In early February 2020, having moved out of both of our houses in Portland, OR and San Francisco, we (Zack and Kim) headed to Thailand for a wedding and a friend-reunion; fully intending on moving to Mexico to follow up on the incredible inaugural mushroom adventure in 2019, the pandemic caught us...and The Fungivore ended up in Thailand for over a year and half, getting the fantastic opportunity to explore the mushrooms of both Northern and Southern Thailand over the course of two seasons, as well as visit the local mycology lab at the university, hunt mushrooms with local indigenous hill tribes, learn the ways in which Thais use mushrooms in almost every meal, and quite unexpectedly learning quite a bit--and making amazing friends along the way--about Thai mushrooms, cultivated and wild!
Though we left Thailand in August of 2021 and completed our move to Oaxaca, Mexico shortly thereafter, we stayed in touch with our Thai contacts with the idea that one day we would replicate what we were doing in Mexico in our other heart home away from home!
That day has finally arrived! We had the amazing opportunity to return to Thailand at the end of 2024 and into the beginning of 2025, and we gathered the required intel to put together a mind-bendingly awesome and delicious adventure for Northern Thailand that we think shines a light on the amazing people, culture, cuisine, textiles and experience of Chiang Mai!

Day-by-Day Itinerary
|
Day 1: Saturday, August 15th, 2026: Welcome to Chiang Mai!! We will have an unofficial tour of the old city of Chiang Mai, and begin our time together eating at one of the most celebrated restaurants in town!
Day 2: Sunday, August 16th, 2026: We meet our friend Adam of Potent Fungi, a displaced Burmese functional mushroom company operating out a Chiang Mai, and discuss what we have in store for the week; head to Monk's Trail/ forest temple hike, followed by a local lunch. Dinner will be a Lanna Family Home Cooking Class! Day 3: Monday, August 17th, 2026: Breakfast and head to Doi Pui Hmong Village for a longer hike and foray at 5000ft; lunch in the village; FREE NIGHT TO EXPLORE CHIANG MAI (no dinner provided) Day 4: Tuesday, August 18th, 2026: Walk to South Gate market for a market tour, then head north to our special location for the next three days! Settle into the area, Dinner at a local restaurant. Day 5: Wednesday, August 19th, 2026: A special full-day experience with the Karen Hill Tribe North of Chiang Mai; we will foray, cook and experience some cultural events that they have prepared just for us! |
Day 6: Thursday, August 20th, 2026: Explore and foray the forests North of Chiang Mai with an amazing family there, and enjoy the afternoon sipping wild-fermented mead with wild honey!
Day 7: Friday, August 21st, 2026: Spend the morning with Master Dyer Huey, Mushroom Dye demonstration; head south back to Chiang Mai. FREE NIGHT TO EXPLORE (no dinner provided) Day 8: Saturday, August 22nd, 2026: head to Bamboo Family Market: Breakfast & Tour; Pickup Head to Doi Saket; after lunch Foray with Friends of Chai, followed by a convivial Dinner with Villagers! Day 9: Sunday, August 23rd, 2026: Cham Cha Sunday Market tour; return to Chiang Mai for Lunch and Final Table Talk at POTENT Fungi. We will have the afternoon free to roam, and it is recommended that every visit the Sunday Walking Street market before our closing dinner at House of Ginger! Day 10: Monday, August 24th, 2026: CHECK OUT; 11:00am |
Events on the itinerary are approximate and based on the availability of our partners or the weather. Some of these events may switch days, or be traded for other similar or even better experiences based on things like where the mushrooms are coming up!

While we have not yet invited a specific expert to join us for this trip, we can surmise that you probably won’t find better guides to Northern Thailand who also know about fungi, also. We have quite the line-up of friends and experts from Thailand that we are working with, as well. Kim poured her heart into exploring the endless textile traditions of more than nine language groups living in and around Thailand, and Zack wrote a book on his understanding of a foreign cuisine, learning from grandmothers, chefs and friends; while both explored the amazing variety of fungi found in South East Asia over two mushroom seasons! We absolutely fell in love with Chiang Mai and the surrounding regions, and we want to share that with you!

Zachary Hunter
Chief FungivoreZachary Hunter (nie. Williams; fmrly. Mazi) has been hunting for wild mushrooms in Oregon since 2001; though he had worked in restaurants his entire working life (from 14 years old), it was in 2005, upon attending Culinary School that he bagan to be known among his friends as The Mushroom Chef.
Fast forward to 2012, he joined the North American Mycological Society, as well as the Fungus Federation of Santa Cruz, and The Sonoma Mycological Association in California. He has lectured on mushroom sin various presentations since 2014, and in 2018 began leading tours to Mexico. In 2020, readying to move to Mexico full time to lead mushroom tours, He and Kimberly got stuck in Thailand for a year and half, learned to speak basic Thai, and explored the mushroom culture of Northern Thailand, as well as writing a (yet unpublished book on the unique cuisine of the region! |
Kimberly HunterMushroom Dyer & Fiber ArtistBased in southern Mexico, Kim Hunter is a forager, fiber artist, and co-founder of The Fungivore. She explores the intersections of fungi, traditional craft, and cultural exchange—using wild mushrooms for both nourishment and natural dyes.
Kim is the creative force behind Traveling Traders Bazaar, a project rooted in her year-long solo journey around the world in 2012. Inspired by remarkable women artisans, she began collaborating with makers across cultures, from artisans in Thailand during the pandemic, to immersive maker experiences in southern Mexico that connect travelers with traditional crafts and preserve textiles traditions for future generations. Kim creates spaces where people can slow down, learn new ways of living, and connect with nature. Her work is an invitation to weave together fungi, fiber, and culture in ways that enrich creative practice, daily life, and more! |
Tieu Chaiammarit
Thailand GuideThe Fungivore first met Tieu Chaiammarit in 2024 when he was one of the guides for a trip we hosted for another travel company. His professionalism and clear love for Thailand, as well as his perfect english made him our number 1 consideration for our first foray into Thailand.
A Chiang Mai native, Tieu (say: Tyoo)--who has worked as a guide for 14 years all around Thailand--knows some of the most fantastic sites and areas of the north to help us find our mushrooms and our bliss, with insights about the history of both Thailand and the former Lanna Kingdom (now Northern Thailand) that only a local could know! He credits his experience with travelers as a connection to the world, as well as cultural exchange with the indomitable Thai Kingdom, an opportunity to show travelers what makes his country so outstanding! |

What is Covered on Trip
The cost of this trip (before applicable discounts) is $3100.00. Double occupancy is assumed for our available accommodations. If you are traveling with someone, be sure to let us know if you need ONE bed or TWO beds. Most meals, lodging, tours, activities, and workshops are included. Alcohol during meals, souvenirs, and some optional activities are not included. Ground transportation to & from Chiang Mai International Airport (CNX) is not included. We can arrange for someone to pick you up at the airport. The deposit is non-refundable IN MOST CASES. We use it immediately to secure transportation, lodging and reservations. However in 2020, the full cost of the trip, deposits included, was fully refunded due to the pandemic. If this trip is canceled completely for any reason, you will get your payment back, minus unrecoverable credit card processing fees. |
Payment Policy, Non-Refundable Deposit and Refund Schedule
Payments for the trip shall be made in full, and includes the NON-REFUNDABLE DEPOSIT (NRD) of 20% which helps us secure accommodations, reserve transportation, book restaurants, and secure the tour. Refunds for cancellations will be returned on the following schedule, minus Stripe processing fees (~3%):

How to Join
We review each application to make sure our mycoadventure is a good fit for all participants and give us insight to create the best experience for each group. Upon review, we're reach out ASAP to offer an info call, payment information and next steps. We will fill the trip in the order of applications received and deposits secured. Our group size is capped at 8 participants for this trip and we have very high interest already this year! With this payment commitment, your deposit will be returned to you only on one of two conditions: the trip is completely canceled (all monies will be returned), or you arrange for someone else to take your place at least 30 days before the start date. YOUR FLIGHTS TO/FROM CHIANG MAI are not included. Please make travel arrangements to be able to join us in CHIANG MAI for dinner on August 15th! Please note, travel to Thailand crosses the international Date line, and can be as long as 48 hours, depending on your itinerary. What this means is that leaving the US on the 13th of August will have you arriving in Chiang Mai on the 15th of August, our start date. We are more than happy to help find flights, as well give suggestions for things to do before or after our tour... we lived in Thailand for a year and half, and there is just so much to see and do!
